Nav Singh has developed one of the more eclectic wine ranges in Tasmania over the last few years.
With a nod towards biodynamics and 'au natural' winemaking, Nav is turning out some wonderful individual expressions of wine from the Apple Isle.
Here's a little taste of what he's up to.
2016 Domaine Simha Simla Blanc Field Blend
This is a blend of four varieties, picked on the same day from the same vineyard. Simla is predominantly Sauvignon Blanc this year, with a healthy portion of Chardonnay, Riesling and a dash of Pinot Blanc.
"It's a wine that changes each year, depending on what the vineyard gives us, which I really like." says winemaker Nav Singh. "This year there's a little more of everything: more florals, more density and a more unctuous palate. This is what we drink the most of at home."
A textural yet aromatic blend which is very moreish.

Nav Singh takes his Rosé pretty seriously, the newest version is made solely from Pinot Noir and might be his tastiest to date.
This is Derwent Valley fruit picked "on a fruit day before the harvest moon." Nav believes that picking on fruit days according to the biodynamic lunar calendar makes for more expressive fruit. It's hard to argue when you try this wine.
It was left on lees for six months to build texture and palate weight. This is a very serious wine. It's long and elegant, both crisply defined and voluptuous - quite simply, it's a next level Rosé that must be tried if you want to see just how good this wine style can be.
Only 50 dozen made.

This Pinot Noir comes from a single vineyard in the Derwent Valley of Tasmania, one of the hot beds of premium Pinot Noir on the Apple Isle.
This is a blend of five clones from five different blocks across the site. It was fermented as whole clusters then sent to aged demi-muid to soften and mature before being bottled unfined and unfiltered.
This is a wonderfully expressive wine, a mix of exotic fruit flavours and spice.
Another great release from this unique Tasmanian producer.
