About The Wine

This is Josephine Perry's most exquisite version of Cabernet Sauvignon, the one that speaks most eloquently of her Wallcliffe vineyard in Margaret River.

This is Cabernet handpicked at perfect ripeness, foot-stomped and left to soak on skins for six months in amphora, then basket pressed and settled for a further three months in a large clay pot.

This is one of the purest examples of top-end Margaret River Cabernet you are likely to find. No additions bar a dash of SO2 to stabilise the wine in bottle. Courageous winemaking and whole-hearted trust in the quality of her fruit conspiring here into one of the region's most idiosyncratic and delicious Cabernet wines.

About Dormilona

Josephine Perry is one of the most exciting emerging producers in Margaret River. Her Dormilona label is setting a new tone for the region.

A self-confessed 'lazy-bones' winemaker, Jo is low-intervention in the winery, instead focusing her energies on the quality of fruit that she brings in the winery.

She uses only organically and biodynamically farmed fruit from high-quality vineyards across Margaret River, and is bringing an alt-styling to the way she produces the hero varieties of this famous region.

These are Margaret River wines with flair and originality. From vineyard to glass, Jo handcrafts each wine with love and tender hands. An authentic producer who's rightfully gaining plenty of attention.

DDS review

Margaret River Cabernet doesn't come much more elegant than this. Or more dynamic. There's a raw energy to the fruit but it's all tucked in so neatly. Blackberry and dried leaves, some red fruit and a a beautiful mineral tannin. It's soft and seductive, gorgeous in lifted violets and regional bay leaf scents. Supreme drinking. It a wine you want to sit back and admire but are constantly compelled to the glass. A thing of Beauty. Kudos, Jo. - Different Drop Wine Team

Additional Info

From The Producer

Dry grown from our single vineyard plot in Wallcliffe. Hand harvest, foot & hand stomped into the terrcotta pots. Hand plunged daily during wild fermentation then left on skins for six months with native malo.

Basket pressed on a cold wintery day back to the amphora for maturation for three months. Hand bottled direct from the potts, sealed under cork with a wax top. No fining, no adds, no filtration, no pumping, no gas, only good old candle power & knuckle grease.

Plus very minimal sulphur at the bottling process - this is to ensure no bottle variation & to eliminate any oxygen pick up.

Blend : Cabernet Sauvignon (100%)
Closure : Cork
Drink Until : 2029
