About The Wine
A light, crunchy white wine from a rarely seen variety here in Australia that is thriving in the Ablington vineyard of the Hunter Valley.
This sees no adjustments through the winemaking process, with wild ferment and a natural malolactic fermentation all happening inside seasoned barrels.
It's fresh, fruity, and oddly familiar even though there are very few examples of the variety here in Aus. The perfect thing to try if you're looking to step out on Sauvignon Blanc or Pinot Grigio.
About Balmy Nights
Balmy Nights is Sydney based sommelier-turned-wine-distributor-turned-small-producer, Dan Simmons', handcrafted wine project.
For his wines, he seeks out NSW vineyards that he feels offer something interesting. The fruit is hand-harvested, the winemaking is hands-off. He's delivering some very interesting alternative depictions of NSW wine.
Dan is part of a small but vocal cohort of young winemakers taking NSW wine into strange but delicious new territory.
