This is the entry point into the monumental red Burgundies from Mounir and Rotem Saouma at Lucien Le Moine.
Mounir allows his red wines a long time to rest before bottling. The cooperage he chooses is very specific, looking for low toast vessels that cradle the wine's flavours rather than dominating. The wine remanis in barrel on gross lees, untouched - no racking or fining or filtering before bottling preserving all the nuance of the fruit and bringing a more expressive wine to bottle.
Mounir and Rotem recommend a good decant before drinking. This is a powerful wine and will benefit greatly from some oxygen before tasting.
About Lucien Le Moine
Lucien Le Moine is a partnership between husband and wife team of Mounir and Rotem Saouma.
Theirs has been one of the most talked about negociant operations on the modern Cote D'Or. They actively source parcels from the finest Premier and Grand Cru vineyards up and down Burgundy.
Winemaking wise, they have been touted as one of the benchmark 'modernist producers', however, Mounir believes that his long, slow elevages and minimal use of sulphur harken back to the Burgundy production of an era gone by.
On their operation, Jancis Robinson wrote, "An extraordinary micro negociant in Beaune. Very serious quality." These are powerful, complex wines of imposing quality and stature.
