This is no shrinking violet. Winemakers Mounir and Rotem Saouma allow their whites a long time on lees and block malolactic fermentation until way into Summer , looking for power and tension rather than leaning on the creamy richness that early malo provides.

About Lucien Le Moine
Lucien Le Moine is a partnership between husband and wife team of Mounir and Rotem Saouma.
Theirs has been one of the most talked about negociant operations on the modern Cote D'Or. They actively source parcels from the finest Premier and Grand Cru vineyards up and down Burgundy.
Winemaking wise, they have been touted as one of the benchmark 'modernist producers', however, Mounir believes that his long, slow elevages and minimal use of sulphur harken back to the Burgundy production of an era gone by.
On their operation, Jancis Robinson wrote, "An extraordinary micro negociant in Beaune. Very serious quality." These are powerful, complex wines of imposing quality and stature.
