If the Barrels of Metricup is the "classic" Margaret River Chardonnay, then Nic Peterkin describes the Wildberry Springs as the "ballerina" - all finesse, elegance, and beauty. It’s sourced from a 30-year-old Wilyabrup site that Nic spent years begging to work with, and it’s about as close to a perfect vineyard as you’ll find in the region.
The 2025 release continues a shift that started in 2024, where Nic began receiving fruit from a new section of the vineyard. This specific block has even more Gin-Gin clone concentration, which has injected a serious amount of richness and weight into what is usually a very lean, high-tension wine. It’s a great year for this label, reminding us that you can have all that classic Wilyabrup power without losing the focused, architectural edge.
The winemaking here is all about preserving clarity. Nic uses only the free-run juice and splits the fermentation between French barriques and quartz amphorae of various shapes and sizes. By skipping malolactic fermentation, he keeps the natural acidity electric and the finish flinty. You get that signature mix of peach, lemon curd, and green apple, backed by a "struck match" character and a touch of cream from regular lees stirring. It’s tightly coiled and incredibly pure, built to drink beautifully now or age for a decade.

If the Wildberry Springs is Nic Peterkin’s exercise in tension, the 'Barrels of Metricup' (BOM) is his masterclass in "controlled richness." Sourced from a certified organic site in Metricup - an inland sub-region with sandy loam over clay - this wine always offers a broader, more generous profile than its coastal siblings.
The 2025 release is easily our favourite of the five vintages Nic has produced from this vineyard. It captures that classic Margaret River "sunshine in a glass" vibe, loaded with peach, lime curd, and stone fruit, but it’s delivered with a level of energy and verve that we haven't seen before.
The winemaking is where it gets interesting: Nic avoids malolactic fermentation to keep the acidity electric, but uses fortnightly lees stirring over 11 months in French oak to build a creamy, "chewy" texture. It’s a clever play that gives you all the weight and generosity you want from a premium Chardonnay without it ever feeling heavy or sluggish. This is classy, high-energy Margaret River Chardonnay that's simply straight-up delicious.
2025 L.A.S. Vino Southern Seas Chardonnay
The 'Southern Seas' is a brand-new addition to the L.A.S. Vino lineup for 2025, born from Nic Peterkin’s hunt for a cooler, more "maritime" expression of Chardonnay. After a string of warm, dry years, Nic headed to the southern tip of the Margaret River cape, where the vines are lashed by both the Indian and Southern Oceans. The result is a wine with a longer growing season and a naturally higher level of "zip" and tension than anything else in the stable.
The winemaking remains as careful as ever: hand-picked fruit, whole-bunch pressed, and fermented in a mix of 90% French barrique (30% new) and 10% amphora. By skipping malolactic fermentation and sticking to the free-run juice, Nic has kept the focus entirely on the site's fresh, salty personality.
This is a leaner, more saline expression of the Margaret River style. Think Granny Smith apple, lemon, lime, and salted cream, all underscored by wet stone and a bit of chalk. It’s elegant and silky smooth - Nic describes it as very much in the vein of a Chablis, but with that extra bit of Australian "oomph" and weight. It’s a compelling, fresh new chapter for L.A.S. Vino that we are incredibly excited about. Might have been our favourite of the 2025 Chardonnays.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.
What that means for you:
- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
Put simply: the box discount is already baked into the price.
