Dr. Edge is one of the country's most enigmatic and exciting wine producers. What started as a 'side hustle' from experienced winemaker Peter Dredge, has grown into an extremely highly-regarded project, responsible for some of Tasmania's finest and most sought-after wines.

Never one to sit still, in 2025 Dredge took the opportunitiy to experiment with his production, taking the same blends of Chardonnay and Pinot Fruit from the Derwent and Tamar valleys, but applying different vessels during the winemaking process.

It's a fascinating look at the impact of oak vs clay vs concrete on the style of the wine, without ever losing the Dredge thumbprint of tension, purity and deliciousness!

2025 Dr. Edge Tasmania Barrique Matured Chardonnay

Peter Dredge is one of the most compelling characters in the modern Tasmanian wine scene. The Dr Edge label started as an alter-ego project to break free from corporate winemaking constraints, giving Dredge a platform to highlight Tassie's distinct sub-regions with an unpretentious, hands-off approach. This season, he has launched a fascinating side-by-side study using identical fruit parcels to show exactly how different maturation vessels alter a wine's DNA.

For this component of the series, Dredge sources a three-way fruit blend from the Derwent Valley, Tamar Valley, and East Coast. The juice goes straight into seasoned French oak barriques for a natural ferment on full lees, including a tiny handful of whole clusters hidden in the barrels. It sits for nine months without any heavy-handed intervention or modern polishing tricks.

There's a lovely richness and approachability to the 2025's. It leads with a distinct, smoky flintiness and a punch of savoury reduction before opening up into green pear flesh, lemon peel, and a distinct herbal lift, with the wood further rounding things out.

It's deep, structured, layered and just so damn delicious to drink. One of our favourite Aussie Chardies in ripping form!

2025 Dr. Edge Tasmania Clay Matured Chardonnay

Peter Dredge has spent decades working across major mainland and Tasmanian estates, building a reputation for crafting exceptionally pure, site-driven cool-climate wines. With this unique vessel series, he is giving us a raw, transparent look at how the vessel itself shapes the voice of the fruit.

This release takes the exact same multi-regional parcel of fruit used in the barrel version - dominated by the Derwent Valley - but matures it entirely within large 1,000L clay amphorae for nine months. Dredge avoids any wood contact here, relying on the breathing properties of the raw clay to handle the wine.

It drops into the glass with a remarkably crisp, pristine energy. The fruit focus is incredibly direct, showing punchy citrus oil, raw nashi pear, and a distinct, wild sea-spray briny note. It feels tightly wound and glossy, with an extra degree of spice and tension perhaps over the barrel-aged version.

Another outstanding and fascinating wine from this winemaking superstar.

Peter Dredge’s journey to becoming one of Tasmania's top winemakers started completely by accident after a sports injury steered him into the cellar. His Dr Edge label has since earned a massive following for its lithe, unmanipulated reds that capture the rugged Tasmanian landscape. This parallel release explores how traditional small barrels compare directly to raw concrete maturation when it comes to Pinot Noir.

Sourced from the Derwent and Tamar Valleys, this parcel sees a generous amount of whole-bunch fruit and partial carbonic maceration during a wild ferment. Dredge then presses the wine into older, seasoned oak barriques to settle down for nine months before bottling without any fining or filtering.

This is a slightly darker beast in 2025 compared to other cooler years. It shows a deeply savoury, dark-toned profile of wild mulberries, forest brambles, and dried tea leaf, layered over a subtle undercurrent of smoked char. The older oak sits perfectly in the background, offering a plush, rounded frame that keeps everything together.

2025 Dr. Edge Tasmania Concrete Matured Pinot Noir

Before setting up his own custom facility, Peter Dredge spent years mastering the nuances of Tasmanian fruit at houses like Bay of Fires and Meadowbank. Dr Edge is his personal Pinot playground. By splitting his 2025 Pinot Noir into distinct maturation vessels, he is letting wine lovers see exactly what happens when you remove wood from the equation.

This is the identical blend of Derwent and Tamar Valley fruit used in the barrel version, similarly fermented with wild yeasts and a healthy dose of whole bunches. Instead of going into oak, it spends its nine months resting inside raw concrete tanks, leaving the vineyard characteristics completely exposed.

The result is an incredibly focused red that carries a defined, crisp line from start to finish. The fruit is all about crunchy forest berries and lifted violets, but it’s the striking, wet-stone mineral sensation that dominates the palate.

A remarkably fresh, complex, and long Pinot, showcasing the raw structural bones of these southern vineyards.

No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
