Nick Spencer’s Medium Dry Red Blend is a nod to a golden era of Australian wine – the classic ‘Aussie clarets’ of the 50s, 60s and 70s. Back then, the focus was on crafting beautiful, balanced wines from multiple varieties rather than spotlighting single regions or grapes. Nick’s 2023 version captures that spirit in a modern, polished way.
Built on a Cabernet Sauvignon base, with Shiraz and a splash of Malbec, it’s vivid and immediately engaging. Expect a lifted, floral nose with notes of blue and black fruits, ironstone, aniseed, and a hint of dark chocolate. The palate is juicy and medium-bodied, with a crunchy cranberry-like acidity and silky tannins that promise a good few years of evolution if you have the patience.
As always with Nick’s wines, it’s an exercise in balance, charm, and drinkability. A roast lamb or a hearty tray of roast veggies would do it justice. This is a true-blue, proper Australian red, thoughtfully done.

Inspired by the classic ‘Burgundies’ of 1950s–70s Australia, Nick Spencer’s Light Dry Red is a fresh, modern take on those elegant, medium-bodied Shiraz-Pinot blends that once defined the Hunter Valley. This is bright, aromatic, and built for effortless drinking, but with enough depth to keep things interesting.
A 50/50 blend of Shiraz and Pinot Noir, each variety was picked and fermented separately - 100% destemmed and fermented on skins for 14 days, before spending 12 months in old puncheons and amphoras. The 2023 vintage is silky, pure, and bursting with red fruit freshness.
Aromatically, it’s blueberries, red cherries, and spice, with subtle notes of cassis and earth adding dimension. The palate is supple and juicy, with fine, powdery tannins and a clean, mouthwatering finish.
Complex yet carefree, serious yet smashable - this is modern Aussie red wine at its best.

Nick Spencer has long had a soft spot for Rosé, and this release shows just how far he’s taken the style. Inspired by time spent in Provence, it blends Sangiovese with a touch of Chardonnay – the white variety adding freshness and lift in the same way Rolle does in classic southern French pinks.
The result is a pale, bone-dry Rosé that’s crisp, savoury and beautifully balanced. Red fruits lead the way – think wild strawberry and cherry – with a subtle floral note and a flicker of spice. The Chardonnay brings a gentle structure and length, keeping everything neat and refreshing.
Made for easy drinking but crafted with intent, this is one of the most consistent and dependable Rosés in the country. Perfect with a long lunch, or simply enjoyed on its own while the sun’s still shining.

Nick Spencer has been championing Tumbarumba Chardonnay for two decades now, and the 2024 release shows exactly why he’s so committed to this high-country region.
The fruit comes from a unique vineyard in the Maragle Valley, sitting unusually low for Tumbarumba at 500 metres, but close enough to the Snowy Mountains to feel the chill each night as mountain air rushes through. Warm days, cold nights – it’s a recipe for flavour and freshness in perfect balance.
2024 was a standout season here, delivering fruit with richness and intensity without tipping into heaviness. Nick hand-picked and pressed the grapes into a mix of French oak puncheons and amphora, where the wine rested for 14 months on lees. It’s a style that gives depth and texture but keeps everything finely tuned.
This is Chardonnay with drive and personality – elegant but not shy – and a wine that will sit comfortably at the table now while also rewarding a few years in the cellar. Another strong reminder of why Nick is one of NSW’s leading voices for cool-climate wines.

Nick Spencer's latest release of Tumbarumba Gruner Veltliner is excellent.
It comes from a single vineyard in the Tumbarumba region, at 750m above sea level. The cool temperatures and the old volcanic soils on this site make it the ideal location for this Austrian variety.
Nick's taken the fruit, gently pressed it stainless steel and bottled it after a couple of months on lees. No tricks, just doing his best to preserve the purity of fruit that this cool site offers.
Nick's move towards a gentler winemaking style pays dividends with the delicacy of Gruner. It's a delicious rendition and one that's sure to be very popular with fans of the variety.

"It has the varietal signature of GV with apple, green melon, some spice cupboard, aniseed, white pepper and citrus zest. It’s fleshy and has some weight and richness, a little savoury/umami complexity, a fair bit of spice, balanced acidity with some powdery grip, and a cinch of grapefruit pith on a finish of good length. Excellent. A little more weighty and complex than previous iterations, perhaps."

The cool conditions during vintage have produced crisp, elegant Pinot Gris with a beautiful mouthfeel.
