Description

Nick Spencer has long had a soft spot for Rosé, and this release shows just how far he’s taken the style. Inspired by time spent in Provence, it blends Sangiovese with a touch of Chardonnay – the white variety adding freshness and lift in the same way Rolle does in classic southern French pinks.

The result is a pale, bone-dry Rosé that’s crisp, savoury and beautifully balanced. Red fruits lead the way – think wild strawberry and cherry – with a subtle floral note and a flicker of spice. The Chardonnay brings a gentle structure and length, keeping everything neat and refreshing.

Made for easy drinking but crafted with intent, this is one of the most consistent and dependable Rosés in the country. Perfect with a long lunch, or simply enjoyed on its own while the sun’s still shining.

A pale pink-bronze blush. This comes laden with spices, watermelon and barely ripe strawberries. There’s a slip of texture, sweetness and fleshiness on the palate. But what makes this enticing is the crunchy acidity from the sangiovese, ensuring the finish is lively and fresh.

Exceptionaly pale crimson in the glass, its looks like strawberry water, if that makes sense. This is an apt first impression as the wine then smells and tastes of strawberry, cream, sweet spice, stone and chalk, a tonic-like aftertaste then adding further to the wine’s charm. This rosé feels zippy and alluring at once. It’s dry, racy, savoury and fruity; it ticks all the boxes and does so in fine style. Great buying/drinking.

2025 Rose, Hilltops, NSW

For those who have been following our journey you will be well aware of our love affair with Rose and our commitment crafting the absolute best. With this in mind we travelled Provence recently to learn as much as we could about Rose.

Tasting Notes

This year's Rosé is a harmonious blend of Sangiovese, known for its luscious red fruit notes, and a touch of Chardonnay, which was fermented on skins in a style reminiscent of the time-honored Provencal method, where the use of Rolle (Vermentino) as a white variety is celebrated. The result is a Rosé that encapsulates the essence of Provence, with delicate floral aromas and a beautifully balanced palate, making it the perfect wine for any occasion.

Nick Spencer Wines

Nick Spencer is one of NSW's most decorated winemakers. Over the span of more than two decades, he has become perhaps the state's most outspoken advocate for the potential of the regions of the NSW High Country, in particular, Tumbarumba and Gundagai.

Nick's wines exemplify balance, style, immense drinkability and exceptional value for money. As his label has expanded, his winemaking has become more adventurous, now incorporating the use of amphora, sulphur-free bottlings and a more stripped-back winemaking style to highlight the quality of the fruit that these lesser-known NSW regions can produce.

He is one of the most important producers in NSW today and is the touchstone of quality for the state.
