Description

Mora is a relatively young but fast-rising Central Otago producer, known for making clean, expressive wines that balance fruit and finesse. Their Brut is a traditional-method sparkling made from Chardonnay and Pinot Noir grown on their Pisa and Bannockburn vineyards.

The base wines are fermented cool, then blended and aged on lees in bottle before disgorgement. It’s a dry, crisp style that focuses on freshness and texture rather than sweetness or weight.

The palate is all citrus, green apple and subtle toast, carried by a fine bead and bright acidity. It’s lively, refreshing and properly made – a clear, modern take on Central Otago sparkling that shows both polish and restraint.

Delicate aromas of citrus and apple with a slightly musky, floral edge. The palate is racy with a fine-grained texture and persistent nervy acidity which drives through to the just off-dry finish. Interesting chalky minerality woven into the restrained fruit and spicy flavours. This is approachable, in the context of its elegant, restrained style. Disgorged 12/12 24.

Pretty lifted notes of white blossom, lemon curd, Royal Gala apples and white-fleshed stone fruit. Palate is zesty and fresh, with crunchy nashi pears and fine persistent bead. Lovely length and mouth filling richness balanced with bright acidity. The perfect aperitif.

Hand-picked and whole-bunch pressed to preserve freshness and purity. The juice was cold settled before being cleanly racked to stainless steel for primary fermentation, using a selected sparkling yeast strain. 45% of the base wine was fermented in seasoned French oak to add texture and complexity. This cuvée includes 20% reserve wines spanning 2013 to 2020, contributing depth and richness to the final blend.

Crafted in the traditional method with secondary fermentation occurring in the bottle. The wine was aged on lees for 24 months to develop complexity, texture and finesse before disgorgement.
