Chablis is a superb winegrowing region completely dedicated to Chardonnay. Wines designated simply as 'Chablis' account for around two-thirds of all production in the region, with grapes coming from anywhere within its boundaries, rather than a specific town or vineyard.
The Clotilde Davenne Chablis comes from the village of Courgis, right next door to her winery in Prehy. The juice is fermented at a low temperature in stainless steel vats, with natural yeasts. The wine then rests for 8-12 months before bottling.
With great minerality, the wine has a beautiful aroma of oyster shells, synonymous with the Chablis region. Flavours of white peach and gunflint, coupled with crisp acidity, lend the wine a mouth-watering quality.

Deceptively weighty for a Chablis, the grapes for this wine come from 40 year old vines situated in the 1er Cru 'Montmains' vineyard. 20% of the wine is aged in old oak barrels producing a rich and creamy white.
On the nose, it’s all notes of white flowers, stone fruits, and tart bright citrus. The palate opens beautifully, round and creamy in texture with honeyed notes leading to a lively yet lingering finish.

Hand-picking is followed by fermentation with native yeasts and wild malo. A few months on stainless steel vats and lees-ageing gives texture as well as longevity.
