Description

Samuel Billaud comes from one of Chablis's most established families. When Billaud-Simon, the domaine his family had run for generations, was sold to Faiveley in 2014, he struck out on his own. His eponymous domaine has since established itself as one of the appellation's most serious addresses, building on everything that made Billaud-Simon great while doing things entirely on his own terms.

The 2024 Séchet was produced at yields of just 10 hectolitres per hectare. To put that in perspective, typical Premier Cru yields in Chablis run four to five times that figure. The entire production of this wine amounts to three wine-globes and a single barrel.

Séchet is a left bank Premier Cru known for intensity and precision rather than floral charm, and this vintage delivers exactly that: dry stone minerality, a tight, linear structure, and a finish of real persistence and tension. The concentration that comes from those yields is extraordinary, and the wine has the depth and architecture to develop beautifully over the next decade.

"The 1er Cru “Séchet” is matured entirely in stainless steel tanks adding to its strong acidity and tension. The green fruits and stone fruits are very fine and showing a great depth. In addition, the minerality, iodine and salivating mouth fill are delightful. It is an impressive Séchet indeed."

Technical notes
At Domaine Samuel Billaud the grapes are harvested by both hand and machine for the Petit Chablis and Chablis and only by hand for the 1er Cru and Grand Cru vineyards. In the vineyard, the yields are managed strictly to accentuate the concentration of the grapes. The harvest date is of vital importance in this regard and Samuel chooses the date without any compromise. As a result it can sometimes take up to four weeks to harvest his plots. This ensures that every plot is at optimal ripeness. Once picked, the grapes are quickly brought to the winery and pressed in the pneumatic press. Then the juice undergoes its alcoholic and malo-lactic fermentation in small stainless steel tanks. Finally, the wines are matured for 12 months on fine lees in stainless steel tanks.

Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
