It's methode ancestral (Pet Nat) made from Gamay (90%) and Poulsard (10%). A beguilingly fragrant and juicy little fizzer, this is very low in alcohol - the perfect thing to slake your thirst in the heat of summer.

Bugey-Cerdon - a hidden gem of eastern France, and an appellation dedicated to the old-school sparklings, from its rocky, hilly vineyard sites.

Something for everyone

Quite sweet but still has a bit of depth of flavour. First tried this at a restaurant with my parents (who aren't drinkers at all) and my parents in law (who have attended many wine tastings), everyone at the table really enjoyed it. Be warned- very carbonated, the cork often pops as soon as the metal cap is removed! My ceiling has a couple of dents in it now. Still worth it.

Great Brunching Wine

Relatively low alcohol content. Goes really well with French toast or strawberry topped crepes.

We call ancestral method, the technique that allows make the Cerdon sparkling. Fermentation turns grape sugar into alcohol and gas carbonic; so we use this natural reaction. After harvest, the grapes (Gamay and Poulsard) are crushed and pressed following a slight maceration to obtain the rosé color.

After settling, (elimination of impurities at the bottom of the tank), the juice is put in vats for fermentation; this is spontaneous; there is no yeast. During this phase, the gas escapes at the top of the tank. About halfway through fermentation, the wine is bottled. In the cellar, at a temperature of around 10 °, fermentation resumes in the bottle, naturally without the addition of sugars or yeasts. The gas trapped in the bottle makes the wine sparkling.

After about two months, the pressure is sufficient, the fermentation stops naturally.. The wine is filtered and corked permanently; the Cerdon is ready to be consumed.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
