Waverley is the last parcel Ricky Evans picks each year. Situated east of Launceston with a little elevation, it's more influenced by surrounding mountain air than the Tamar River, and it ripens Chardonnay almost at a standstill. Ricky has been farming it since 2015, when the previous owner had stepped away and the vineyard was derelict.
A tiny parcel, whole-bunch pressed and sent directly to a mix of French puncheons and barriques for wild ferment, with some portions through MLF. Eleven months on full lees in barrel, then four months in tank. The 2023 is tight and linear, which suits the site well.
Cool, taut and mineral, with fine chalky acidity running the length of the palate and a persistent, stony finish. It's a more restrained and structural style than the other Woodlawn Chardonnays, and the one most likely to reward patience in bottle. Good now with air, better with a few years.

Three Wishes sits north of Hillwood on the eastern bank of the Tamar, a warm, protected site planted in 2000 and sheltered from Bass Strait's northerly winds. The river lies a few hundred metres to the south, adding another moderating influence. It's a site that delivers both power and freshness, and Ricky Evans picks in two passes to make the most of both: the first for tension and nervous energy, the second for texture and width.
All fruit is whole-bunch pressed, naturally settled, and run to a mix of French and Austrian puncheons for wild ferment, with some portions through MLF. Eleven months on full lees in barrel, then four months in tank before bottling. The winemaking is consistent across the Woodlawn Chardonnays; what differs is what the site brings.
Three Wishes in 2023 is restrained and complex, with stony mineral clarity and a savoury, nutty depth that builds through the palate. There's texture and generosity from the warm site, but enough acidity and focus to keep it precise and long. It rewards time in the glass and has the structure to develop further in bottle.

The debut Chardonnay from Ricky Evans' home block at Swan Bay, the same estate as the Woodlawn Park Vineyard Pinot Noir. Planted to Bernard clones 95 and 76 on free-draining aeolian sands, north-facing above the river, it's a generous site that delivers flavoursome, expressive fruit compared to the cooler character of the other Woodlawn Chardonnays.
The winemaking is layered: multiple passes through the vineyard, with whole-bunch pressed and destemmed/lightly crushed components kept separate to achieve different solid levels. Wild fermented in a mix of French and Austrian puncheons and barriques, with some MLF, then 11 months on full lees in barrel followed by four months in tank before bottling.
The result has more fruit weight and generosity than the Three Wishes Chardonnay, with the lees work adding texture and a savoury, pastry-dough complexity to the mid-palate. It's a fuller style, but with enough tension and line through the finish to keep it honest. The vines are young and the wine feels like it has more to give with time.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.
What that means for you:
- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
