Three Wishes sits north of Hillwood on the eastern bank of the Tamar, a warm, protected site planted in 2000 and sheltered from Bass Strait's northerly winds. The river lies a few hundred metres to the south, adding another moderating influence. It's a site that delivers both power and freshness, and Ricky Evans picks in two passes to make the most of both: the first for tension and nervous energy, the second for texture and width.

All fruit is whole-bunch pressed, naturally settled, and run to a mix of French and Austrian puncheons for wild ferment, with some portions through MLF. Eleven months on full lees in barrel, then four months in tank before bottling. The winemaking is consistent across the Woodlawn Chardonnays; what differs is what the site brings.

Three Wishes in 2023 is restrained and complex, with stony mineral clarity and a savoury, nutty depth that builds through the palate. There's texture and generosity from the warm site, but enough acidity and focus to keep it precise and long. It rewards time in the glass and has the structure to develop further in bottle.

94 points - "There’s loads of interest here, with a metamorphosis from first pour to final sip as the wine relaxes in the glass. It opens in a savoury and alluring mode—honeysuckle, hay, cheesecloth, and hard cheese rind give way to tighter, higher-toned notes of lemon peel, preserved lime, bath salts, and talc, with a glimmer of salted pastry dough beneath. Initially, it leans more to savouriness over fruit, but as it unfurls, the fruit notes integrate beautifully into the profile. The palate is creamy yet precise, cut through with pithy yellow grapefruit, green apple, lemon juice, and dehydrated lime. A tensile coil of limey acidity brings focus, drive, and length. Situated just north of Hillwood on the eastern bank of the Tamar River, this is a unique site, planted in 2000.

Protected from the northerly winds of bass strait, the vineyard sits in a small valley, facing north/north east, it is a warm site, also influenced by the river which lies a few hundred metres to the south.

A beautiful site for chardonnay, we typically pick in two passes, the first for nervous energy and tension, the second chasing texture and width. These are all whole bunch pressed, naturally settled, run to a mix of French & Austrian puncheons for wild ferment. Some portions are allowed to proceed through MLF, and the wine sees around 11 months on full lees in barrel, before transfer to tank to rest for another 4 months.

Woodlawn Tasmania

Woodlawn Tasmania is the umbrella under which Ricky Evans' three wine labels coalesce.

His three labels include the regional Two Tonne Tasmania series of Tamar Valley Riesling, Chardonnay and sub-regional Pinot Noirs, the experimental series of wines under the Havilah label made for his wine bar in Launceston of the same name and his Single Vineyard range of exceptional premium wines from his beloved Tamar Valley vineyards farmed by Ricky himself.

Evans is one of Tasmania's most dynamic winemakers. Over his time since serendipitously starting the Two Tonne Tasmania label in 2013, Ricky's approach to both farming grapes and making wine has matured dramatically. The young gun is now an established player in the upper echelon of the island and is set to be one of Tasmania's most influential voices in wine for many years to come.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
