About This Wine
While sometimes thought of, and sold as Sherry, Pedro Ximenez is wholly something of its own. While Romate is based in Jerez, the base for this PX comes from Montilla-Moriles further inland.
Romate buy young PX wine, then transport it back to the winery in Jerez to age, this is also blended with about 15% of their estate Oloroso.
Full of raisins, chocolate, plums, floral notes and a nutty, slightly savoury finish, this wine has a blue cheese match written all over it.
About Romate
Founded in the late 18th century by Juan Sánchez de la Torre, Sanchez Romate is one of the last few Jerez wineries still in the hands of local, family owners.
With 70 hectares of the best white albariza soils of Jerez, all of their fruit is sourced from their vineyards, save for some Moscatel, which comes from Chipiona on the coast.
While respect for tradition runs deep for them, they also have evolved and modernised in the winery under current winemaker Jose Luis (‘Pepe’) Infante.
