Before Dr. Edge became a household name for Tasmanian cool, Peter Dredge spent years honing his craft making sparkling wine at the renowned Bay of Fires. That deep technical experience, combined with his personal obsession for the dry, piercing style of "Grower Champagne," forms the DNA of this wine.
This is a serious Traditional Method sparkling, sourced from the Tamar Valley - a region Dredge knows intimately. A blend of Pinot Noir, Chardonnay and Pinot Meunier, it is built predominantly on base wines from the 2021 and 2022 vintages. True to his love for texture and complexity, the wine was left to rest on tirage for a solid three years before being disgorged in October 2024.
As the "Extra Brut" label suggests, this is a wine stripped of excess sugar to reveal the skeletal purity of the fruit. It is dry, chalky and piercing, offering a "textural on-entry" style that feels effortless yet deeply structured. It is ready to drink now but has the precision to cellar for another five years.

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.
To add a gift box to your order, simply add at checkout. The special requests box is your friend, please give us as many details of what you are looking for and we will try our best, or get in contact to discuss it with you.

Our warehouse is automated so unless you tell us otherwise, we will ship your order. If you can't add more wine to your cart it means we are low on stock of that wine. For example, if you are only able to 3 bottles and no more that means we only have 3 bottles left of that wine. If it's a must have, please contact us and we may be able to order more in for you.
