Peter Dredge is Dr. Edge - one of the most accomplished and talented winemakers on the Apple Isle.

Dredge has a wealth of experience garnered at high-profile wineries across the country, including his current 'day job' at Meadowbank where he steers the ship. Dr. Edge is his personal passion project, with the enigmatic range including premium single vineyard explorations of Pinot Noir, Chardonnay and Riesling, as well as a plethora of fun, smashable experimental creations.

Here is a tasting pack of six new release wines from Dr. Edge, including his excellent Riesling and the delicious 'Tyrannosaurus' dREDge Pinot Meunier.

2025 Dr. Edge Tasmania Riesling

Peter Dredge ("Dr. Edge") doesn't do boring Riesling. This pan-Tasmanian blend pulls together fruit from the North (Tamar Valley), South (Derwent Valley), and East (Coal River Valley) to create a wine that is as structural as it is refreshing.

It isn't your standard "squeaky clean" Tassie Riesling. Dredge leans into texture and complexity here, fermenting the juice naturally in a mix of clay amphora, old French oak casks, and stainless steel. The amphora component even includes whole clusters, adding a savoury, phenolic grip that sets this apart from the pack.

After six months on lees, it is bottled unfiltered with a small amount of residual sugar to balance the ripping acidity. The result is classic citrus and steel, but with "meat on the bones" - a layer of savoury funk and weight that makes it fascinating to drink. It is textured, complex, and a little bit wild.

2024 Dr. Edge Ambrosia Schonburger Pinot Gris

The Dr. Edge Ambrosia brings together the common and often wonderful Pinot Gris with the rare and virtually unknown Schonburger in an amber wine with lots of personality.

Coming from the cool-climate Tamar Valley in Tasmania's north, the whole berries were co-fermented with five days of skin contact before being pressed to old oak. The finished wine sees no fining or filtering and only a small amount of sulphur before bottling.

Lovers of skin-contact wine will swoon over this one. Fresh notes of honey, lychee, elderflower, peach and cantaloupe leap from the glass, while the palate is bright, chalky and alive, with a nice tangy finish.

2025 Dr. Edge Chardennui Chardonnay

Peter Dredge’s "Chardennui" is the antidote to boring Chardonnay. A play on the French word ennui (meaning listlessness or boredom), this wine is anything but tired - it is designed to be the "not so normal" sibling in the Dr. Edge lineup.

Sourced from vineyards in the Tamar Valley (North) and the East Coast, the fruit is treated with a bit of "skinsy" action to dial up the texture. About 15% of the fruit was foot-stomped and fermented on skins, while the rest went into old oak puncheons. The final twist? A splash of Derwent Valley Riesling was added to the ferment to give it an extra kick of "fruit motivation."

The result is fresh, fun and delightfully off-kilter. It delivers white peach and nectarine flavours, backed by a textured, minerally grip from the skins and a zippy, clean finish. It’s Chardonnay with the volume turned up.

2025 Dr. Edge Rosa Rosa Rosa

Peter Dredge describes this as a "risqué little rosé," and like everything he does, it is equal parts serious winemaking and serious fun. It was built specifically for Rosie in My Midnight Dreams, one of Hobart’s best-loved waterfront wine bars, but it’s just as at home poolside on a sunny afternoon.

The 2025 release is a "drinkeasy" blend of Pinot Noir and Pinot Meunier. Dredge has kept things dainty and precise here - the fruit saw just a couple of hours of skin contact, resulting in a wine that is barely blushed and incredibly fresh.

It is pale, dry, and racy, with a floral lift and a "blink-and-you'll-miss-it" glass-draining quality. There is a touch of funk to keep it interesting, but ultimately, this is a wine designed for guzzling. As the label implies, you’re probably going to need a bigger glass.

2025 Dr. Edge Tyrannosaurus dREDge Pinot Meunier

The Dr. Edge Tyrannosaurus dREDge is a dinosaur in name but definitely not in nature.

Named in honour of being called a "dinosaur" by an employee (we assume a former employee now), winemaker Peter Dredge sourced the Pinot Meunier grapes from Pipers Brook in Tassie's north, and the Derwent Valley in the south, with a little splash of Pinot Noir thrown in for a touch more grunt. A mix of 50% whole berry on skins and the rest under carbonic maceration, it then spent two months on lees in tank.

Tart cherries and fresh pomegranate mix with a herb-infused and forest floor savouriness to create an ultra-bright and cherry wine. A light little pixie of a wine that's just a pleasure to drink.

2025 Dr Edge Pinot Rain Pinot Noir

Bright, gluggable Pinot Noir from the master with the medical license (not really!), Dr Edge.

With Tassie Pinot prices soaring, we thank Peter Dredge for creating a "vin de soif" style Pinot Noir that brings all the goodness of Tasmanian vineyards without the hefty price tag.

Deliciously red-fruited and easygoing, it's a wine that's ready to go whenever you are. Pop it in the fridge for a minute before serving if you want, drink it in the Purple Rain with your favourite frog or Prince.

With a wealth of experience garnered at wineries such as Bay of Fires, he has revitalised the Meadowbank label and returned it to its place as one of the must-watch vineyards in Tasmania.

Dr. Edge is his passion project where he can take risks and make Pinot Noir, Chardonnay & Riesling that truly excites him. His creativity can fly under the Dr. Edge banner and wines that walk a fine line of tension, funk and freshness invariably arise.

Only small batches of wine is produced, all made by hand, and typically they sell out in short order. Playful, pleasurable and remarkably thoughtful, the Dr. Edge creations are riveting things to drink and have rightfully earned cult status among collectors of Tasmania's finest.

No, feel free to mix it up! There is no minimum requirement. You can order wines in any quantity or combination, 1 or 50+ bottles.

No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.

**And if you find it cheaper elsewhere?** Let us know. If the same wine is available at a lower price at another retailer (including at their mixed-six or by-the-dozen rate) we're happy to match it.
