Peter Dredge (Dr. Edge) has never been one to follow the herd, and his take on Pet-Nat is no exception. While the category is often known for being cloudy and unpredictable, Dredge prefers his fizz clean, precise, and dangerously drinkable.
The "Dr. Ongo" is a clever blend of lightly extracted Pinot Noir and Pinot Meunier (saignée method), which is disgorged to remove the "chunky, chewy bits" often found in other Pet-Nats. He then tops the bottles up with still-fermenting Riesling juice to kickstart the fizz. The result is a bright pink, dry sparkling Rosé that is fresh, vibrant, and completely additive-free.
The name? It’s a cheeky homage to those who militantly insist on preservative-free wines for "health reasons" while happily indulging in durries and other vices.

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.

Our warehouse is automated so unless you tell us otherwise, we will ship your order. If you can't add more wine to your cart it means we are low on stock of that wine. For example, if you are only able to 3 bottles and no more that means we only have 3 bottles left of that wine. If it's a must have, please contact us and we may be able to order more in for you.
