Description

Serré is Bannockburn's flagship Pinot, coming from a tiny, densely planted Geelong block established in 1984, inspired by founder Stuart Hooper’s love of Burgundy and now producing some of the estate’s longest-lived wines.

Certified organic, the vineyard has almost 7,000 vines per hectare, planted on their own roots in clay over basalt and limestone. Tight spacing and naturally low yields give Serré its concentration, with more than forty years of vine age adding to the appeal.

The 2025 includes some whole bunches layered into the ferments, followed by ten months resting on lees in French oak, 40% new. It’s a warmer-season release, with plenty of fruit to support that oak and the structure to benefit from time in bottle.

Dark cherry and plum come with dried herbs, spice and a little earthy, mineral character. There’s real weight and depth, held firmly by fine-grained tannins and fresh acidity through a long, savoury finish.

This is serious Pinot, and patience will pay off. Extremely limited.

Serré, planted in 1984 and certified organic in 2021, is the oldest high-density vineyard planting in Australia. The vineyard was inspired by Stuart Hooper's love of the great wines of Burgundy, and its tight spacing, low trellising and low-yielding vines combined with the uniqueness of our place in the world, contribute to produce wines of great power, elegance and harmony.

Viticulture
Serré, planted in 1984 and extended in 1986, is certified organic as of 2021. It is planted at 1.2m x 1.2m spacing (6,944 vines/hectare) with MV6 clone Pinot Noir on its own roots. This is likely the oldest high-density planting of Pinot Noir in Australia. With north-south row orientation and a complex soil profile of mixed clay over weathered basalt and limestone, it is naturally low-yielding. This vineyard is responsible for some of our finest, most powerful, and long-lived Pinot Noir wines.

Winemaking
Handpicked fruit was fermented in open-top fermenters, with a portion of whole cluster layered through the ferments. The wine spent 12 days on skins before being pressed to French oak hogsheads, of which 40% was new. Malolactic fermentation occurred naturally, and the wine remained untouched, on lees, through maturation for 10 months prior to blending and bottling.

Tasting Note
Dark cherry, plum, dried herbs, exotic spice and beautifully integrated oak introduce a wine of remarkable depth and texture. The palate is concentrated yet refined: tightly structured, with firm, fine-grained tannins and real concentration, Serré's high-density planting delivering immense depth while retaining freshness, precision and balance. Fresh acidity carries the wine through to a defined, focused finish, the warmth of the season lending intensity without sacrificing clarity. Structured and refined, this is one of the most complete wines we have made from this historic vineyard, with the depth to age and the balance to reward decades of cellaring. A wine of real presence and power, and a compelling expression of the site.

Bannockburn

For over 50 years, Bannockburn has been a quiet force in Australian fine wine. The story began in 1974 when Stuart Hooper discovered and planted this now-iconic site in Victoria’s Moorabool Valley. In 1978, Gary Farr joined as winemaker, bringing a Burgundian lens that helped define the estate’s identity.

Today, Matt Holmes leads the winemaking, first stepping in for the 2005 vintage and returning permanently in 2015 after Michael Glover’s departure. Holmes’ style is thoughtful and site-first - guided by organics, minimal intervention, and an intuitive feel for balance. His Chardonnays are chiseled and composed. The Pinot Noirs - more precise than ever - are some of Victoria's best.

Viticulturist Lucas Grigsby, a 30-year veteran, tends the vines with the same hands-on, regenerative mindset. Together, they farm sustainably - straw mulching, composting, and nurturing cover crops - all to express the site with absolute clarity.

Bannockburn’s single-vineyard range tells the deeper story. S.R.H. Chardonnay draws tension and salinity from ancient marine sediments. The iconic Serré vineyard, planted densely in 1984, channels a Grand Cru sensibility. These are wines shaped by place, not ego. They hum with Burgundian influence, but speak fluently in an Australian accent.

Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.
