Description

William Fèvre is one of the true heavyweights of the region, and their village Chablis is the perfect measuring stick for why. While many at this level rely on machine harvesting, Fèvre remains committed to hand-picking their fruit and using gravity-flow winemaking to preserve the purity of the juice.

The 2023 vintage was a dynamic season defined by alternating heat and rain, resulting in a generous harvest of exceptional health. Despite the warm finish to the summer and a harvest that kicked off in early September under high temperatures, the estate managed to lock in freshness. Sourced from vines on classic Kimmeridgian marl and limestone (rich in fossilised oysters), the wine was fermented naturally and aged for 10 to 12 months in stainless steel tanks to maintain tension.

The result is a wine that balances the generosity of the season with the cut of the terroir. It opens with a fresh, elegant bouquet of citrus, white-fleshed fruit and spring flowers. The palate is supple and approachable, yet supported by a beautiful, distinct minerality that keeps it focused and precise.

The 2023 vintage was characterized by a mild and dry winter, followed by frosts in April, with no major impact
on the vines. After a hot and dry month of May, storms in June led to a high but well-managed health pressure
by the estate's teams. During the summer, alternating heat and rainfall accelerated the ripening of the grapes
despite a veraison slowed by the lack of water in August. The harvest, which began in early September under
high temperatures, yielded generous volumes with excellent health conditions.
WINE MAKING SCHEME
Application of the principle of gravity to avoid any pumping, which could alter the quality of the wine. Short
pneumatic pressing (1.5 to 2 hours) for a gentle separation between the solid and liquid parts of the grapes.
Very light static racking to retain enough fine lees for the alcoholic and malolactic fermentations to occur
naturally. Aging for 10 to 12 months in small stainless steel tanks to maintain freshness
