Yoshiaki and Kyoko Sato are doing something truly special at their farm in Mount Pisa. They moved away from corporate lives in Tokyo and London to commit fully to this site, and their obsession with biodynamic farming has made them one of the most respected names in Central Otago. "Sur les Nuages" translates to "Above the Clouds," and it really captures the elevated, ethereal style they aim for. We’re big fans of this couple, their ability to produce wines of such incredible clarity is always a highlight of our year.

The 2023 growing season was a bit of a rollercoaster, but it played right into the Satos' hands. After a nervous, frosty start to spring, a warm and settled summer provided the concentration they need, while the cooler finish to the season preserved the natural brightness of the fruit. Because Yoshi and Kyoko stick to a very hands-off approach - natural ferments and minimal sulphur - this wine is a transparent look at that vintage. It isn't weighed down by heavy oak; instead, it's driven by the energy of the site.

It’s remarkably expressive. You get bright, crunchy layers of wild strawberry and red cherry, underpinned by a more savoury, earthbound character - think forest floor and a touch of dried herbs. The texture is the real winner here; it has a lovely tension and a fine, silken frame that makes it feel incredibly sophisticated. It’s a plush, soulful Pinot that shows exactly why the Satos are considered masters of their craft.

My pinot of the year

I taste a lot of wine as part of my Diploma. This is one of the few in 2025 I had a strong emotional reaction too. Mine and my wife's eyes lit up when they met on sipping this. Fruit driven with excellent acidity driving this. The shape'of the wine is truly wonderful, a round filling feeling of ultimate fruit. I don't often return to buy a wine a second time. I bought four more of these as soon as I could.

2022 Sato - Le Ferme de Sato Les Violettes:
Born from Central Otago’s 2022 vintage—a season of cool springs, sun-soaked summers, and patient autumns—Ken Sato’s “Burgundian hermit” channels Bannockburn’s opulence into a poised, cool-toned narrative. The year’s slow ripening rhythm amplifies purity: violet whispers, cold-steeped black cherries, and flinty tension hum alongside tannins as finely woven as Kyoto silk, while Fuji-snowmelt acidity slices through the fruit’s depth. Time coaxes out truffled earth and sandalwood, yet the wine’s soul remains anchored in 2022’s signature equilibrium—dark intensity tethered to elegance,its fiery Southern Hemisphere heart framed by an Eastern-inspired structure, austere and imperfectly beautiful.

Yoshiaki Sato and his wife Kyoko harbor a deep passion for wine that led them on a unique journey. Originating from careers in international banking in Tokyo and London, they took a bold step toward realizing their wine aspirations by relocating to New Zealand. After a brief period at Lincoln University in Christchurch, where they pursued a graduate diploma in viticulture & viniculture, they eventually found themselves in Central Otago.

Yoshiaki Sato honed his craft during a two-year tenure at Felton Road alongside Blair Walters and a time at Mount Edward with Duncan Forsyth. The year 2009 marked the inception of the Sato label, as they acquired organically produced grapes, crafting their first 250 cases of Pinot Noir. A fervent advocate for organics and biodynamics, Sato adopts a hands-off approach in the winery, relying on natural ferments sans commercial yeasts, eschewing additives in the fermentation process, and employing minimal sulfur just before bottling.

In early 2016, the Satos made a significant investment by acquiring a 5-hectare (3.2 hectares effective) east-facing plot on Mount Pisa near Cromwell. This chemical-free site, featuring Cabernet Franc, Chardonnay, Chenin Blanc, Gamay Noir, and Pinot Noir plantings, serves as a testament to their unwavering dedication to sustainable and quality winemaking.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
