Saint-Aubin has become one of the great insider appellations of Burgundy, and no producer has done more to raise its reputation than Pierre-Yves Colin-Morey. The village sits tucked between Chassagne and Puligny, with vineyards that benefit from cooler exposures and limestone-heavy soils. In warmer years like 2023, this translates into wines that are full of energy, with a balance of ripeness and precision that is hard to beat.
PYCM treats this cuvée with the same rigor as his top premiers crus – low yields, careful pressing, wild yeast ferments, and élevage in quality oak that respects the fruit rather than dressing it up. The result in 2023 is a Chardonnay that captures the brightness of the vintage but with plenty of drive and structure. It’s layered, textural, and transparent to its terroir, a clear marker of why Saint-Aubin is no longer just a “value” pick but a destination in its own right.
As always, quantities are painfully small, and the reputation of this bottling means it disappears fast. It’s one of those rare wines that delivers both serious craftsmanship and immediate drinkability.
