From one of Burgundy’s most exciting micro-producers comes a Saint-Aubin of uncommon focus and poise. Domaine Lamy-Caillat’s En L’Ebaupin hails from a steep, south-facing slope planted in 1963, just above the 350m mark in altitude. It’s a small, beautifully exposed plot with up to a 38% incline - one of the keys to the wine’s precision and energy.
Like all Lamy-Caillat wines, this is shaped by patience and restraint. Pressed slowly in an old mechanical press and matured for a full 24 months on lees without bâtonnage, the wine is then bottled by hand with no filtration. Sébastien Caillat’s hands-off approach, combined with the naturally cool cellars in Chassagne, results in a wine that balances tension with layered, crystalline fruit.
The 2022 offers bright citrus, white flowers, and a mineral line that feels chiselled from the vineyard’s rocky soils. There’s an elegance here, but also intensity, the kind of Chardonnay that slowly reveals its pedigree over time, not in a rush to impress.
Production rarely exceeds 2,000 bottles. A true insider’s Burgundy, from a domaine rapidly becoming one of the region’s most sought-after names.
