He's played around with the Pet-Nat style for a few years now, has Peter Dredge, but he thinks he's onto a winning formula here.
This is mostly saignee Pinot Noir from his Tasmania Pinot Noir. Not happy with the chunky, chewy bits so often found in the bottom of other Pet-Nats, Dredge has disgorged each of these bottles and topped them with still fermenting Riesling juice to create a fresh and fizzy drink which is ready for guzzling.
Only a limited amount of this is available. Dredge only makes this wine in tiny quantities. If you want a crack at the hilariously named Dr. Ongo, you'll need to be quick.

Peter Dredge is Dr. Edge. He is one of the most intuitive and talented winemakers on the Apple Isle.
With a wealth of experience garnered at wineries such as Petaluma, he has revitalised the Meadowbank label and returned it to its place as one of the must-watch vineyards in Tasmania.
A nominee for the Young Gun of Wine Awards in 2017 for his work at Meadowbank, Dr. Edge is his passion project, a place where he can feel free to take risks and make Pinot Noir that truly excites him.
