Description

This is Dredge in full control - a vintage méthode traditionnelle sparkling made entirely by hand, from vineyard to tirage to disgorgement. The fruit’s from a single site in the Tamar Valley, mostly Pinot Noir with a small pinch of Meunier, bottled under the Dr. Edge label as part of the ‘P.J. Dredge’ sparkling series.

Pressed and bottled in 2020, it spent five years on lees before being disgorged in early 2025, no dosage added - Brut Nature, bone dry. But don’t expect something austere or hollow. It’s textural, layered and remarkably complete, with the kind of quiet complexity that rewards attention without demanding it.

This is a sparkling wine made with intent and zero shortcuts. Limited in volume, as always, and drinking beautifully now - though there’s absolutely no rush.

Very light colour, with a very subtle blush or taché, the aromas are fresh and mostly primary, with suggestions of iced pastries and brioche, and in the mouth it's full and rich with quite marked acidity that drives the super-dry aftertaste. It certainly cleanses the tongue, and would be refreshing with lighter foods, especially oysters natural. A superb wine of lip-smacking dryness and energy.

    I had it first at Maria’s in Hobart and it didn’t disappoint when I got to drink it at home - if you like Logan Estate from Mudgee you will love this one

'P.J. Dredge' by Dr. Edge are Vintage Traditional Method Sparkling wines. Picked, fermented, bottled and disgorged by hand. The 2020 Blanc de Noirs is a Tamar Valley single vineyard blend of Pinot Noir & Pinot Meunier (4%)

Tirage took place in June 2020, the wine was then left to develop in bottle on lees (yeast) for 5 years. - Disgorged 'Brut Nature' or 'Bone Dry' - February 2025.

Don't be fooled by 'Brut Nature' - This textural -'Prestige' - Blanc de Noirs is ready for grand occasions now, or cellar for up to 5+ years.

Peter Dredge is Dr. Edge. He is one of the most intuitive and talented winemakers on the Apple Isle.

With a wealth of experience garnered at wineries such as Bay of Fires, he has revitalised the Meadowbank label and returned it to its place as one of the must-watch vineyards in Tasmania.

Dr. Edge is his passion project where he can take risks and make Pinot Noir, Chardonnay & Riesling that truly excites him. His creativity can fly under the Dr. Edge banner and wines that walk a fine line of tension, funk and freshness invariably arise.

Only small batches of wine is produced, all made by hand, and typically they sell out in short order. Playful, pleasurable and remarkably thoughtful, the Dr. Edge creations are riveting things to drink and have rightfully earned cult status among collectors of Tasmania's finest.
