About the Wine
Long time fans of Jo Perry and Dormilona will know that she has been playing with pet nat for a few years now, adjusting her recipe to get it just right. Well, we are pleased to report that the wait it over. This Blanc de Blancs is damned fine wine.
The fruit was sourced entirely from the Burnside BD vineyard, which has produced fruit for several great Chardonnays in years gone by. After a gentle ferment, a dosage of extra Chardonnay juice, the wine was bottled and left to finish ferment. Hey presto - pet nat!
Dry and textural, this is all about fresh lemons and grapefruit, with a chalky grip and a soft creaminess. The fizz is delicate and cleansing, making this dangerously more-ish and incredibly fun to drink. Anything cooked over coals would be a great match here - this is a perfect park or picnic wine.

Josephine Perry is one of the most exciting emerging producers in Margaret River. Her Dormilona label is setting a new tone for the region.
A self-confessed 'lazy-bones' winemaker, Jo is low-intervention in the winery, instead focusing her energies on the quality of fruit that she brings in the winery.
She uses only organically and biodynamically farmed fruit from high-quality vineyards across Margaret River and the Swan Valley and is bringing an alt-styling to the hero varieties of the west.
These are natural wines with flair and originality. From vineyard to glass, Jo handcrafts each wine with love and tender hands. An authentic producer who's rightfully gaining plenty of attention.
