Description

Faiveley has been part of Burgundy’s DNA for nearly 200 years, and this old-vine Gevrey-Chambertin is a reminder of why they’re still at the top of their game. Sourced from around 10 hectares of vines, many planted back in the mid-20th century, it’s a blend of plots that gives a classic snapshot of Gevrey’s rugged, deep-fruited charm.

2021 was a cooler, more traditional vintage, which suits Faiveley’s style to a tee. The fruit is hand-harvested, with a mix of whole bunch and de-stemmed grapes, and after a slow ferment and 19 days on skins, it’s aged in mostly older French oak to keep the focus on purity and site expression. The result is a wine that’s structured but not hard-edged, with dark fruit, earthy grip, and the kind of understated power that makes Gevrey so compelling.

It’s drinking well now with a bit of air but has the bones to reward patience if you can tuck it away. Classic Burgundy through and through - no gimmicks, just old vines doing their thing.

The fruit of our meticulous selection from our 20 plots, spanning some 10 hectares, these old vines are over forty-five years old. Our wine seduces with its exceptionally intense aromas, revealing notes of ripe red fruit sublimated by animalistic nuances.

The exceptional characteristics of Gevrey-Chambertin are authentically revealed by our old vines. Delightful aromas of ripe dark berries immediately entice the nose, while the palate exudes rich, powerful flavours.

The old vines are over 35 years old and produce an exceptionally intense and aromatic wine that reflects the unique character of its terroir. With its deep, clear ruby red hue, it reveals notes of black fruits and excellent strength and concentration. As with all Gevrey-Chambertin, it requires a few years of patience before reaching its full potential.

The grapes are harvested and sorted by hand. The proportion of de-stemmed grapes and whole clusters varies depending on the vintage. The wines are punched down daily in order to extract colour, tannins and aromas from the skin of the grapes. After a 19 day vatting period, the alcoholic fermentation is complete. The free-run wine is run off using a gravity system whilst the marc is pressed slowly and gently in order to extract an exceptionally pure press wine. The wines are aged for 14 months in French oak barrels (20-30% new oak) which have been selected for their fine grain and moderate toast. The wines are left to age in our cellars at consistent, natural hygrometry and temperature. The wines are aged in vats for 2 months at the end of the ageing process.
