About The Wine
This minerally, saline Chardonnay comes from a plot of old vines recently acquired by the iconic estate of natural winemaking phenomenon Jean Francois Ganevat.
Resting on the ancient Jurassic limestone soils of the Les Varrons hillside, these vines transfer an electric acid structure into the wine. The grapes are handpicked and fermented with wild yeasts before undergoing three years of ageing in old 600-litre oak barrels.
Bottled unfiltered and unfined, with no sulphur.
