When Peter Dredge and his wife are drinking at home, more often than not, they're drinking low-dosage Champagne (usually from a grower). But drinking these beautiful, piercing, dry sparklings on the regular can be an expensive business. 

Enter the Dr. Edge Brut Nature...

This is a non-vintage Tasmanian sparkling - with zero dosage - and just a couple of years in bottle. The fruit - a blend of Pinot Noir, Chardonnay & Pinot Meunier - hails from premium sites in Tamar Valley in the north of Tasmania. Dredge has a wealth of experience making traditional method sparkling, from years working at Bay of Fires adn House of Arras and more recently for Meadowbank - now those expertise come to the fore under the Dr. Edge label.

If you imagine biting into a crisp, fresh granny smith apple while facing the bracing Tasmanian wind and sea spray on the coast of the Apple Isle you'll get a mental picture of what drinking this is like.

It's fresh, it's racy, it would go beautifully with a plate of oysters. A fantastic, frisky fizz from our favourite Tassie Doctor.

Very light yellow/straw colour with freshness and some aged complexities introducing a toasty element. The wine is very dry and rich, complex and deep, with incisive lemon, verbena/herbal and lightly toasty flavours of balance and charm. Appetising and high-energy. Long, refreshing finish. A very smart non-vintage wine.

Distinct brine and Manzanilla-like character, ripe lemon and green apple, yeast and flowers. It’s dry and saline, the texture is firm and chalky, there’s a thirst-slaking bite of acidity, a lovely tickle of delicate bubbles, and a steely dry finish of excellent length. It makes me fancy a gilda or three.

    I had it first at Maria’s in Hobart and it didn’t disappoint when I got to drink it at home - if you like Logan Estate from Mudgee you will love this one

"Dr Edge 'Brut Nature' is a Traditional Method Sparkling blend of Tamar Valley Pinot Noir, Chardonnay & Pinot Meunier.

Predominantly 2022 and 2021 base material, the wine is left to develop in bottle on tirage for 2 years. - Disgorged 'Brut Nature' or 'Bone Dry' - July 2024."

Peter Dredge is Dr. Edge. He is one of the most intuitive and talented winemakers on the Apple Isle.

With a wealth of experience garnered at wineries such as Bay of Fires, he has revitalised the Meadowbank label and returned it to its place as one of the must-watch vineyards in Tasmania.

Dr. Edge is his passion project where he can take risks and make Pinot Noir, Chardonnay & Riesling that truly excites him. His creativity can fly under the Dr. Edge banner and wines that walk a fine line of tension, funk and freshness invariably arise.

Only small batches of wine is produced, all made by hand, and typically they sell out in short order. Playful, pleasurable and remarkably thoughtful, the Dr. Edge creations are riveting things to drink and have rightfully earned cult status among collectors of Tasmania's finest.
