Bruno Paillard, or more precisely these days, his daughter Alice, aims to make a delicate, elegant style of non-vintage Champagne.
It's a righteous blend of the three main Champagne grapes, Pinot Noir, Chardonnay and Pinot Meunier, sourced from across the Paillard vineyards. Some barrel fermentation, inclusion of old reserve wine, three years on lees and a very low dosage - it all adds up to a crisp, smooth, cleansing sparkling that demands more than one glass per person...
About Bruno Paillard
Bruno Paillard, born and bred in Reims, started one of the first new Champagne houses for 100 years when he established his own Maison in 1981.
Success followed success, and he bought his first vineyards in 1984 -three hectares of grand cru vineyards Oger in the Côte des Blancs. Fast forward to now and his holdings cover 32 hectares, including 12 grands crus.
His daughter Alice now co-runs the estate, and is one of the most renowned women in Champagne.
