Description

There’s really nothing else in Australia quite like Aqua Santa. Julian Castagna makes it from botrytised and dried Viognier grapes, building the wine through a solera that’s been ticking along for nearly two decades. It matures slowly under a thin veil of flor, developing that savoury, nutty edge you usually only see in old sherry or vin jaune.

It pours a deep gold and smells like a pantry in autumn – orange peel, quince paste, apricot, honey, walnut and a little spice. The palate is rich and layered, but it’s not heavy or cloying; there’s a lift of acidity and freshness that keeps it alive. The finish is long and dry-edged, a perfect match for soft, ripe cheese or anything a bit funky.

Tiny quantities made, and impossible to copy – this is one of those wines that could only come from Castagna.

It makes for a stimulating and essential cheese wine – something 'smelly and creamy', according to the maker. 96 points - "The NV Aqua Santa is an utterly unique style of Viognier that is created from dried grapes of 36 degrees baume that were aged in a solera system under a blanket of flor. The product is staggeringly complex and delicious. Pale amber in color, this wine has a beautiful nose of apricot tart, cinnamon stick, preserved pears, fresh ginger and mandarin peel carrying off a distinctly oxidised / rancio character. It is very rich, very sweet, very crisp and very long in the finish. I’m not sure about development but the extensive exposure to oxygen should have rendered it stable, suggesting it could keep for many years. No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
