Description

Timo Mayer’s ‘Dr. Mayer’ is consistently the most structured, boundary-pushing Pinot in his lineup. It’s driven entirely by his signature use of whole-bunch fermentation, which gives the wine its distinctively wild, savoury edge.

The 2025 vintage carries a bit more warmth and fruit weight than previous releases, but it remains firmly in that classic Mayer groove. The whole-bunch component is perfectly judged this year - it adds serious complexity and a savoury backbone without feeling overtly stalky or green.

You get a bright core of ripe red plum, raspberry, and dark cherry. It's juicy and aromatic upfront, held together by clean acidity, and finishes with a dry, mineral grip from those superfine, sappy tannins. It's a highly detailed Pinot with plenty of tension and bite. Always the most sought-after in the Timo line-up and with good reason.

Fantastic Wine

What a fantastic wine that unfurled its complex layers in the glass over several hours.
Glad I bought a few as will be exceptional with a few years bottle age.
Topflight Yarra pinot.

More savoury from the whole bunch, but not overtly bunchy this year. Ripe, juicy, dripping with red plum and raspberry. Lovely acidity and savoury — that’s the big point of difference from the previous wine. Finishes savoury with mineral, sandstone‑like tannins. Warm, ripe, generous, but still very much in the Mayer groove.

Timo Mayer

German-born, enigmatic winemaker Timo Mayer is one of the great characters of the Yarra Valley. The words bombastic, charismatic and wild are as much applicable to the man as his wines.

From his close-planted Yarra Valley vineyard, evocatively named 'Bloody Hill', Timo carves out some astounding wines made with low levels of new oak and minimal additions. The signature of Timo's winemaking style is his penchant for whole-bunch ferment. His wines have an ethereal quality, firm tannins and impeccable structure.

These are compelling and extremely limited wines that tell a unique story of the Yarra Valley.
The Bloody Hill range is now the responsibility of Timo's talented son Rivar Mayer Ferguson, and has dropped the Mayer on the label from the 2021 releases. They continue to be superb value wines.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
