Description

Timo Mayer’s take on Yarra Valley Chardonnay is all about absolute purity and focus. It is unadorned, linear, and made with a completely hands-off approach to let the fruit do the heavy lifting.

The winemaking here is incredibly strict when it comes to preserving freshness and clarity. The wine is fermented and aged in old hogsheads for six months before being transferred to stainless steel. There is zero malolactic fermentation and no lees stirring. You won't find any obvious oak character here - just pristine, driving fruit.

The 2025 release brings a bit more roundness and generosity to the mid-palate compared to previous years, but make no mistake, it remains razor-sharp. Expect a lean, focused nose of bright citrus, lemon zest, and a hint of stone fruit. It’s tightly wound with mineral tension and finishes with a brilliant, salty, stony edge.

It is properly good right out of the gate, but giving it a little time in the cellar to shed its baby fat will pay off nicely.

    purity and minerality!

Bright citrus and a little stone fruit on a lean, focused nose, all wrapped in mineral tension and a gentle saline edge. The palate is fresh and youthful, yet already showing more roundness and generosity than previous vintages. No oak apparent, as always. Delicious even now, just waiting to shed a touch of baby fat. The finish is mineral, stony, salty — proper good.

Timo Mayer

German-born, enigmatic winemaker Timo Mayer is one of the great characters of the Yarra Valley. The words bombastic, charismatic and wild are as much applicable to the man as his wines.

From his close-planted Yarra Valley vineyard, evocatively named 'Bloody Hill', Timo carves out some astounding wines made with low levels of new oak and minimal additions. The signature of Timo's winemaking style is his penchant for whole-bunch ferment. His wines have an ethereal quality, firm tannins and impeccable structure.

These are compelling and extremely limited wines that tell a unique story of the Yarra Valley.
The Bloody Hill range is now the responsibility of Timo's talented son Rivar Mayer Ferguson, and has dropped the Mayer on the label from the 2021 releases. They continue to be superb value wines.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate
