Description

Timo Mayer's Cabernet is never going to be your standard, heavy-handed claret.

Sourced from Saint Huberts Road in the Yarra Valley, he completely flips the script on the variety. Instead of relying on heavy oak, Timo uses 100% whole-bunch fermentation to build the wine's framework. The structure here comes entirely from the skins, stems, and seeds, making for a much fresher, more energetic drink.

The 2025 release carries a bit of extra flesh and a plush, velvety texture. It leads with classic Mayer Cab aromatics - cassis, a hit of blue fruit, and a distinctly leafy freshness, backed by crushed herbs and subtle tobacco.

On the palate, it is highly concentrated but kept perfectly precise by superfine tannins and a driving, graphite-like mineral line. It has the bones to age, but it's dangerously drinkable right now.

A unique cabernet expression from Timo Mayer. Medium bodied. Lush mouthfill with enjoyable herbal notes on the back palette yet overly sweet primary fruit up front. Keen to re-visit in a couple of years.

Sourced from Saint Huberts Road. Classic Mayer Cabernet — cassis, Ribena, leafy freshness. Concentrated palate with superfine tannins and a mineral line that keeps everything precise and composed.

Timo Mayer

German-born, enigmatic winemaker Timo Mayer is one of the great characters of the Yarra Valley. The words bombastic, charismatic and wild are as much applicable to the man as his wines.

From his close-planted Yarra Valley vineyard, evocatively named 'Bloody Hill', Timo carves out some astounding wines made with low levels of new oak and minimal additions. The signature of Timo's winemaking style is his penchant for whole-bunch ferment. His wines have an ethereal quality, firm tannins and impeccable structure.

These are compelling and extremely limited wines that tell a unique story of the Yarra Valley.
The Bloody Hill range is now the responsibility of Timo's talented son Rivar Mayer Ferguson, and has dropped the Mayer on the label from the 2021 releases. They continue to be superb value wines.

No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
