Description
A relatively new addition to the stable for Michael Dhillon (of Bindi fame), it hails from the Glenhope vineyard at the northern, granite-rich end of the Macedon Ranges. The vines here were planted back in 1995, but for years the fruit was essentially "lost" to interstate blends. Since 2021, however, the site has found its groove again, and this release shows exactly why Michael was drawn to it.
The winemaking finds a clever middle ground - Michael calls it the "Goldilocks" zone. Instead of a simple stainless steel ferment, the fruit was wild-fermented in seasoned French oak and left on fine lees for six months. That time in wood isn't about oak flavour; it's about building texture and flow, ensuring the wine isn't just sharp acid and simple fruit.
The result is wonderfully balanced. It has plenty of aromatic lift - think lime juice, talc, blossom and a touch of musk - but there is a savoury, spicy undercurrent from the lees contact. The palate is dry and medium-weight with a distinct chalky minerality that speaks to those granite soils. A welcome recent addition to Michael Dhillon's impressive stable.
