Description

Shaun Crinion has been on a mission to remind people what Yarra Valley Cabernet can do, and this wine keeps making the case. The fruit comes from a single site at Steels Creek, planted in 1981 by grower Simon Peirce, one of the warmer pockets of the valley where Cabernet Sauvignon and Franc can ripen fully without losing their brightness and perfume.

The 2025 was a warm, dry year, which is exactly what these varieties needed, and the blend stays consistent: 68% Cabernet Sauvignon and 32% Cabernet Franc, with 20% whole bunches for lift and complexity. Wild ferment, 18 months in old French oak barriques, nothing heavy-handed.

The Franc is the key to what makes this wine work. It brings an aromatic lift and freshness that keeps things lively rather than dense, and you can feel it throughout. There's good structure and fruit depth, but the wine moves easily, driven more by acidity and bright fruit than tannin or oak. Classic Yarra Cabernet character without any of the austerity.

Delicious now but also genuinely cellar-worthy. As always with Dappled, the price makes it even easier to love.

"There’s plenty of depth and ripeness to the fruit but it all feels perky and alive. The Cabernet Franc influence is clear, as a positive."

94 points - "There’s plenty of depth and ripeness to the fruit but it all feels perky and alive. The Cabernet Franc influence is clear, as a positive. Blackcurrant, boysenberry, mulberry, apple, cut grass, strawberry and black tea notes keep the entertainment factor high. There’s good tannin here too; grapey, grippy and soft at once. It’s a livelier expression of cabernet than is customary but it’s an excellent one." - Campbell Mattinson (The Wine Front)

Customer Reviews

Made from the Steels Creek Vineyard and grown by Simon Peirce, this vineyard was planted in 1981 and at 45 years young produces exceptional Cabernet Sauvignon and Cabernet Franc . The blend is 68% Cab Sav and 32% Cab Franc with 20% whole bunches included in the ferment. It's fermented with wild yeast and had 18months in old French oak barriques.

This variety is one that the Valley used to be widely recognised for and I’ve been wanting to bring it to life for some time.

Tasting Notes

It was a classic warm and dry year for these varieties and so the wine pours out with a ridiculous bright purple colour. The aromas are the benchmark Yarra Cabernet, black currant, violets and dusty cigar box. The palate is plush and dense with black fruits, medium tannins and fantastic length. It’s great now but also great for the cellar! Classic old school Claret.

Dappled Wines

Dappled owner/winemaker Shaun Crinion has a mountain of winemaking experience from around the globe, culminating with the establishment of a label all of his own.

Shaun's focus is on expressing the sub-regionality of the Yarra Valley through simply gorgeous Pinot Noir and Chardonnay and a growing range of experimental wines.

With the combination of Shaun's A-grade fruit from the Yarra's top growers and his precise, astute winemaking, the value on offer in the Dappled range is second to none.

He was James Halliday's Best New Winery in 2018. The wines have only stepped in quality since then though the modest pricing remains the same. Unsurprisingly, his wines sell out in short order each year. He's now regarded as one of the best small-scale producers in the modern Yarra Valley.

No, feel free to mix it up! There is no minimum requirement. You can order wines in any quantity or combination, 1 or 50+ bottles.

No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.

**And if you find it cheaper elsewhere?** Let us know. If the same wine is available at a lower price at another retailer (including at their mixed-six or by-the-dozen rate) we're happy to match it.

If you can't add more wine to your cart it means we are low on stock of that wine. For example, if you are only able to 3 bottles and no more that means we only have 3 bottles left of that wine. If it's a must have, please contact us and we may be able to order more in for you.
