2025 Bondar Fiano

In our opinion, one of Australia's best Fianos. Pure fruit with layers of waxy texture built on zippy natural acidity. Quality stuff.

Description

Fiano is fast becoming the white grape of choice for McLaren Vale, and Andre and Selina Bondar are right at the front of the pack. The 2025 release comes from two distinct sites managed by Ben Lacey: the cool, coastal Branson Road block in Tatachilla and the warmer, north-facing Olivers Road site. These vineyards sit on limestone soils, producing thick-skinned fruit that holds onto its natural acid line despite the summer heat.

Andre Bondar's goal is simple: make a wine that is "fine and fresh, not neutral or boring." To hit that mark, he keeps the winemaking precise. The fruit was picked in mid-February and fermented mostly in stainless steel to lock in the energy, with a 10% splash going into old oak. Crucially, the pressing was gentle but deliberate, extracting just enough phenolic grip from the skins to give the wine some backbone.

This is a wine that marries texture with tension. It is aromatic and lively, showing notes of white flowers, waxy citrus and a touch of hazelnut. It has a chalky, savoury finish and lovely weight to it. Through the finish, there's a distinct lick of sea-spray tang speaks to the coastal location, making it incredibly food-friendly.

"Again, texture, pithy detail and vigorous but supremely harmonious acid tension wrap up the story. Great drinking here."

Mainly from Ben Lacey’s Branson Road vineyard in Tatachilla, supplemented with fruit from the Minchella family, also in Tatachilla. Predominant steel ferment, with some older oak and amphora, then blended and raised in steel for four months. The '24 was the best Bondar fiano I have seen, and this sits squarely beside it. Golden apple and corella pear, sea spray and air-dried linen, lemon balm, orchard blossom – so lively and energetic for a warm and dry year. Again, texture, pithy detail and vigorous but supremely harmonious acid tension wrap up the story. Great drinking here.

    Bondar bewdy!

A very tasty Fiano, with plenty of texture, acidity and flower/pear hints on the palate and nose

    Wonderful summer wine

Easy to drink with low acidity. If you are looking for something different to Chardonnay, Sauv Blanc, Pinot Gris, then try this wine.

Fresh, pure, dry and textural. One of the rising star white varieties of McLaren Vale. Made mostly in tank to preserve the aromatic and varietal freshness, a small proportion was fermented and aged in old French barrels to enhance the texture and complexity.

Bondar Wines

Andre & Selina Bondar are one of the great modern Australian wine success stories. We have been massive fans of their wines since their very first vintage and tell anyone who will listen that if you want to taste what modern McLaren Vale wines are all about then this is who you need to try.

Their home block, the highly decorated Rayner Vineyard, which straddles the Blewitt Springs and Seaview sub-regions of The Vale, was originally planted back in the 1950s but the Bondar family chapter in that vineyard's story will be its most significant. Dre and Sel's wines are honest and vibrant, built more on freshness and digestibility rather than raw South Australian power.

They make brilliant, vibrant Grenache, balanced and concentrated Shiraz, elegant Adelaide Hills Chardonnay, and one of the country's most bankable Rose wines plus a raft of small-batch alternative varieties. Their range nails quality and drinkability at every turn.
