Description

If River Sands is your easy weeknight pour and Alluvium the one you stash in the cellar, Slate Farm is the food wine in the Unico Zelo Fiano line-up. Brendan Carter calls it their “desert island wine,” and it’s hard to argue – this is the bottle that never fails to light up a table.

The fruit comes off a block in Polish Hill River, Clare Valley – a site that tested plenty of varieties in the cool, late 2024 vintage, but Fiano didn’t miss a beat. Drought-hardy, disease resistant and thriving in red clay over shale, it cruised into the winery in late April, clean and beautifully balanced.

In the glass, it’s got both punch and poise. Tropical notes of pineapple and custard apple meet citrus oil and a twist of yuzu, while the palate is savoury, structured and just a little spicy.

Among Unico Zelo’s single-site Fianos, this is always the crowd-pleaser. Bold, distinctive, and seriously versatile, it shows exactly why Brendan and Laura Carter have earned the reputation as Australia’s champions of this southern Italian variety.

    Delicate, delicious.

    Really enjoyable food wine. Plush with kiwi, apple and a little custard. Could do with a touch more acidity but really nice.

    Delicious textural white

    A favourite textural white, great with food.

Winemaker's Notes:
In love with this variety and this vineyard more than ever after the 2023 vintage. The 'Unico' Block in Polish Hill River and was absolutely SMASHED by botrytis this year. But the Fiano was in perfect nick. Drought hardy and disease-resistant. Exactly why we love the variety.

The wine itself is true to form the most popular of the Single Vineyard Fiano's we make. Bright pineapple, kiwi, custard apple, lime oil - got a bit of a yuzu vibe this year too! A little less intense on that tropical vibe this year thanks to a very cool vintage where this fruit didn't arrive at the winery until the end of April (!!!). But a ripper wine nonetheless.

Unico Zelo

Unico Zelo is the project of winemaking couple Brendan and Laura Carter. In their words, their aim is to create “Italian-inspired, textural and site-expressive wines” and “Australian examples of Mediterranean varieties in an approachable and jovial fashion.”

Since bursting onto the scene in 2014 with their eye-catching, outrageously good value alternative vino, the Carters have spread their wings and their range. They now make a large suite of wines, including single vineyard examples of Fiano, Nero d'Avola and Nebbiolo. They are one of the most dynamic winemaking duos in the Adelaide Hills.
