Description

This is the flagship red from Sinapius - sourced from their most tightly spaced vines, and one of the most compelling Pinot Noirs in Tasmania.

Blended from the La Clairière and Enclave blocks, both planted to 7,700 vines per hectare, this wine is a study in precision and patience. The yields are minuscule (less than half a kilo per vine), the clonal mix diverse, and the resulting wine is layered, tense, and full of promise.

2023 saw 100% whole berries wild fermented over three weeks, before 12 months in French oak (20% new) and another five in tank to settle. No fining or filtration.

It’s a coiled, sinewy wine in its youth, wild raspberry and plum sit at the core, wrapped in dried herbs, Chinese five spice, pomegranate, and a touch of flinty reduction. The tannins are chalky and assertive, the acidity mouth-watering and savoury.

This isn’t a Pinot for instant gratification. It’s built for the long haul. Lay it down and watch the precision and tension unfurl into something profound. A serious wine from a producer operating at the top of their game.

    Boutique pinot noir

    After drinking this wine at one of Melbourne’s best restaurants, I was happy to find that Different Drop stocks it. It’s a sophisticated and satisfying Tasmanian pinot noir that hits all of the right notes - classic yet contemporary. Highly recommend.

    Beautiful Pinot Noir

    Delicious, layered Pinot which is great with food or on its own. Very easy to drink.

Handpicked from two north-east facing high density blocks, La Clairiére and The Enclave, planted to 7,700 vines per hectare. Volcanic soils, 12 different Pinot Noir clones, and super low yields (<0.5kg per vine – 30hl/ha). Like previous vintages, the decision was made to blend both blocks as the wine was more complete than the sum of its parts.

The grapes were gently destemmed, naturally fermented with 100% whole berries for 3 weeks before pressing and maturing on full lees for 12 months in French oak barriques (20% new). Blended to tank to rest and integrate for 5 months. Unfined and unfiltered, this wine was bottled in September 2024.

Sinapius

Sinapius is a premium boutique Tasmanian winery started by two young, passionate winemakers.

The couple, Vaughn Dell & Linda Morice, purchased the site when they were only 24-years-old and chose to plant their vines in the Burgundian fashion opting for high-density planting and low-yielding crops. Their small labour of love has budded into one of Tasmania's most exciting viticultural projects.

Vaughn passed away tragically in 2020, however, the Sinapius label continues under the guidance of Linda and the help of some loving friends. The Sinapius wines are of extremely high quality, made in small amounts and showcase their unique patch of dirt with transparency, purity and power.
