The P.A.R. project explores a range of varieties that Nick Spencer believes will define the next generation of Australian wine.

Nick loves Sangiovese. The lightness, the savouriness, its versatility. When produced in a pure, light-weight style such as this, it's a beautifully supple and yet serious thing to drink.

A high-altitude vineyard in the Hilltops region supplies the fruit. No oak, just a sandstone 'anfora' acts as the ageing vessel so you get the essence of the variety mainline without obfuscation. It's a perfect all-rounder for anytime, anywhere.

94 points - "Nick Spencer cut his teeth at the highly successful Eden Road Wines in the Canberra district before heading out on his own. He sources fruit from regions that aren’t yet household names but still produce quality fruit. Here he takes the Italian variety Sangiovese, adds 10% Cabernet Sauvignon (thus creating what is akin to a ‘Super Tuscan,’ a nod to the French/Italian power blends from Tuscany). Winemaking sees open vats for fermentation before 14 months maturation in 200L Amphora. Minimal sulphites and vegan friendly. Bright, floral and earthy nose: sour cherries, violets, black olive, red jelly crystals with a herbal core of tobacco, oregano and thyme. There’s a wet sand, damp turned fresh sod, roast almond earthiness that acts as a base. It’s medium-bodied, cherry and nuts, some savoury flourishes of tobacco and dried herb, a chamois-like chew to tannin, with some grainy grip on a slightly sappy finish of good length. Nick Spencer Wines

Nick Spencer is one of NSW's most decorated winemakers. Over the span of more than two decades, he has become perhaps the state's most outspoken advocate for the potential of the regions of the NSW High Country, in particular, Tumbarumba and Gundagai.

Nick's wines exemplify balance, style, immense drinkability and exceptional value for money. As his label has expanded, his winemaking has become more adventurous, now incorporating the use of amphora, sulphur-free bottlings and a more stripped-back winemaking style to highlight the quality of the fruit that these lesser-known NSW regions can produce.

He is one of the most important producers in NSW today and is the touchstone of quality for the state.

No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
