Description

This is the cooler, more restrained sibling to the Three Wishes Chardonnay, sourced from the tiny Waverley Vineyard just east of Launceston. Ricky Evans has spent years nursing this site back to health, and his patience has paid off - this laser-focused Chardonnay captures the pure, linear expression of this high-altitude, mountain-influenced vineyard.

Planted in 2005, Waverley is a low-yielding, high-acid site, producing fruit with exceptional drive and minerality. The 2022 release was whole-bunch pressed and fermented in second-use French puncheons, followed by extended aging on lees in tank to build texture without sacrificing tension.

This is Chardonnay at its most precise - a wine of crushed rock, sea spray, and citrus intensity. Aromas of white peach, green apple, and lemon zest lead into a taut, mouthwatering palate, where layers of grapefruit pith, fresh almond, and subtle spice unfold with each sip.

For lovers of mineral, structured, and beautifully detailed Chardonnays, this is a must-try.

This site has always provided Evans with pure, vibrant, structured fruit. It’s a site that holds its acidity, and the wines are lacy and bright with line and length. The fruit is pressed as whole bunches to second-use puncheons for fermentation. A small portion went through malolactic conversion. In early 2023, the wine was sent to a tank for a further five months on lees before being bottled and matured for an additional 12 months before release.

Woodlawn Tasmania

Woodlawn Tasmania is the umbrella under which Ricky Evans' three wine labels coalesce.

His three labels include the regional Two Tonne Tasmania series of Tamar Valley Riesling, Chardonnay and sub-regional Pinot Noirs, the experimental series of wines under the Havilah label made for his wine bar in Launceston of the same name and his Single Vineyard range of exceptional premium wines from his beloved Tamar Valley vineyards farmed by Ricky himself.

Evans is one of Tasmania's most dynamic winemakers. Over his time since serendipitously starting the Two Tonne Tasmania label in 2013, Ricky's approach to both farming grapes and making wine has matured dramatically. The young gun is now an established player in the upper echelon of the island and is set to be one of Tasmania's most influential voices in wine for many years to come.
