Description

Josh Cooper goes outside his Pinot & Chardonnay foundation with this Cabernet Sauvignon. It's utterly delicious and extremely drinkable with a bit of time in the glass.

The source is the Shay's Flat vineyard in Landsborough in the Pyrenees. It spent 12 months in barrel before a further 4 months in tank to tighten it all up.

It's on the darker side of Cabernet, with cassis, chocolate and olive notes and some cedar and spice flowing through the palate, which is fine and detailed and not overbearing at all.

The Shay’s Flat Vineyard is situated on an elevated picturesque ridge in the heart of the Pyrenees. A distinctly Australian setting with the vineyard surrounded by wheat paddocks, bushland and scrub. The 20+ year old vines are rooted deep into mineral
rich shale, quartz and mudstone soils, growing powerful, yet detailed fruit.

Intense dark cherry and cassis, mulberry, lavender and black olive, flecked with wild herbs and a alluring graphite and cedar complexity. A refined palate leads with plush fruit, before a rumble of fine, layers tannin and cleansing acidity with a persistent trail of graphite, dark cocoa and Dutch liquorice.

This bottling opens wonderfully in the glass and decanter and one should be incredibly excited to see its development in bottle.

Joshua Cooper

Joshua Cooper is the son of Nelly and Allan Cooper, the founders of the acclaimed Cobaw Ridge winery in the Macedon Ranges.

Born and raised on the top-tier cool climate wines of his family, Josh's wines have a delicacy and unforced feel to them. As you might imagine, growing up in the Macedon Ranges, Chardonnay and Pinot Noir are two varieties he particularly excels with, as too is his great love, which is Cabernet. He sources his fruit from a series of growers across central Victoria who farm with a like-minded philosophy of organic farming and sustainability, with plans to plant his own vineyard in Macedon in the future.

Josh makes only a small amount of each wine and they are in high demand from those who want to get in early on the next generation of Cooper. He is undoubtedly one of the country's most exciting and acclaimed young winemakers, being named James Halliday's Best New Winery for 2024 as well as the winner of Gourmet Traveller Wine magazine’s Young Winemaker of the Year 2020.
