Description
There are few white wines in Australia with a pedigree like the Elizabeth. First created by the legendary Maurice O’Shea in 1956 to honour a visit from the Queen, it has remained the benchmark for Hunter Valley Semillon ever since. While the standard release is delicious young, this "Cellar Aged" edition is the real bargain - it has been held back at the winery to let those complex, toasty layers develop so you don't have to do the waiting.
The 2021 vintage was kept in the dark to settle and stretch out. It is unoaked and fermented in stainless steel to preserve absolute purity, but that extra time in bottle has transformed it. The nose is refined and restrained, showing freshly cut citrus alongside developing notes of buttered toast and lanolin.
On the palate, it is fine, tight and pure. You still get that classic backbone of fresh lemon and lime acidity, but it’s now softened by a lovely honeyed texture. It is a masterclass in how this variety ages - crisp and refreshing, yet sneakily complex. Insanely good drinking for the dollars asked.
