Eisenstone is built around a simple idea - Barossa Shiraz should be treated like the great wines of Burgundy, with each vineyard telling its own story. Stephen Cook has dedicated himself to finding the region’s best old-vine sites and letting them shine with minimal intervention and exacting attention to detail. The Hoffmann Dallwitz Vineyard, deep in the northern Barossa’s Ebenezer sub-region, is one of the region’s most prized sources of Shiraz, producing wines of power, structure, and longevity.

This 2021 release is drawn from a tiny section of the vineyard - just a handful of rows of 70+ year-old vines. These ancient vines, planted in rich ironstone and deep red clay, produce fruit of incredible depth and concentration. The wine spent 20 months in 50% new French oak, carefully balancing richness with finely structured tannins. Only 2,400 bottles were produced, each individually numbered.

This is a serious Barossa Shiraz - built for the long haul but already showing the detail and energy that sets Eisenstone apart. A true reflection of Ebenezer’s intensity and Stephen Cook’s precision winemaking, this is a wine that will develop beautifully over the next 15+ years.

Vineyard Notes
The grapes for the Hoffmann DV (Dimchurch Vineyard) single vineyard wine are sourced from the renowned Dallwitz Block, which was largely planted between 1888 and 1912, and more specifically rows 25-30 of the “younger” 70+ year old vines. Depending on the vintage conditions generally between 800 and 2,400 bottles are produced.

Winemaking
The grapes were fermented in small batches and after fermentation was matured in 50% new French oak for 20 months prior to bottling. Minimal intervention is used in the winemaking process and the wine is moved the minimal times prior to bottling and is not cold stabilised or filtered.

Deep intense ruby red in colour. Savory fruit with ripe berry fruits overlaying spicey oak characters. The wine is typical of Barossa Old vine and is luxurious and coats the mouth giving eh wine extraordinary depth and length of flavour. The structure is balanced for ease of drinking when young but will support development over many years of careful cellaring.
