Description

Sparkling has always been part of the Ashton Hills story, and in the cool, damp folds of the Piccadilly Valley it makes perfect sense. This 2021 release is a rosé style drawn from the estate’s Pinot Noir and Chardonnay, varieties that thrive on these high, shaded slopes below Mount Lofty.

The growing season was kind – mild, steady and free from extremes – allowing slow ripening and pristine fruit. After gentle whole-bunch pressing and primary fermentation, the wine spent time on lees in bottle to build texture and complexity before release.

In the glass it’s pale salmon, with scents of strawberry, redcurrant and a faint floral lift. The palate carries those red fruits alongside crisp citrus, a touch of brioche from the lees, and a fine bead that keeps everything taut and fresh. It’s dry, refreshing, and just layered enough to feel special.

So good that even the winery gas sold out!

Pinot Noir fruit for this wine is sourced from a single vineyard in the Piccadilly Valley – one of the coolest, wettest, and most humid parts of the Adelaide Hills. This area is renowned for producing crisp, finely flavoured sparkling wines.

Growing Season
The 2021 season began with excellent winter rainfall and moderate temperatures during flowering, ensuring good fruit set. A mild December and January provided ideal ripening conditions, allowing full flavour development in the fruit.

Bouquet
A complex mix of red apple, white nectarine, and lifted florals, supported by notes of fresh-baked shortbread.

Palate
Vibrant flavours of strawberry and raspberry layered with brioche, a result of extended time on lees. A low dosage keeps the wine fine and focused.

Hand-picked fruit, chilled before whole-bunch pressing

Fermented in tank, with colourless Pinot Noir base wine assembled and tiraged

Bottle-fermented via méthode traditionnelle and aged on lees for 3 years

Disgorged with a small addition of dry Pinot Noir table wine at dosage, enhancing colour, flavour, and texture

No, all prices are set at the full discounted dozen rate already.

Most wine retailers list at a single-bottle price and then discount 10–15% when you buy six or twelve. We've taken the opposite approach. Since the overwhelming majority of our orders are already 6 bottles or more, our list price is set for the case buyer from the start. There's no inflated single-bottle price to discount down from.

What that means for you:

- One price, same for everyone — no minimum to hit to unlock the best rate
- No mixed-six gymnastics to qualify for a discount
- Our single-bottle price is typically at or below a traditional retailer's by-the-dozen rate

Put simply: the box discount is already baked into the price.
