About The Wine
It was a family tradition to make wine that first started the winemaking journey for young NSW based Tony Zafirakos.
His father, Ari, would buy grapes from the local market and make wine for the family in his garage as was the way in their Greek community.
Here Tony makes a tribute to the classic Greek wine style, Retsina. This is skin contact Chardonnay and Zibibbo infused with Aleppo pine resin during ferment.
The balance here is excellent. Just enough of the piney lift to let you know you're drinking something a little left of centre but with plenty of fresh fruit and bright acidity to keep you coming back for more.
A one of a kind in Australian wine at the moment. Traditional and cutting edge all at once.

In 1962, Ari Zafirakos came to Australia from his homeland in Greece. After missing the wine of his home, Ari began buying grapes from the local market and making wine using the same traditions and techniques he had used back home.
Now, years later, his son Tony has caught the winemaking bug and is turning out some very interesting and delicious wines with one principle at his core, "nothing added, nothing taken away".
These wines are as natural as it gets. "I wouldn't even know how to add sulphur," says Tony. It's a family tradition that has now become Tony's obsession. A great new name to explore if you're a lover of natural wine.
