The fruit for this wine came from South Gippsland, and was gently pressed into older oak barrels for natural fermentation and secondary malolactic ferment (MLF) before being bottled.

It is a rare thing, to find a Sauvignon Blanc which underwent MLF, but this works deliciously well. There is plenty of freshness, with Sauvignon Blanc's varietal characteristics shining through - under ripe passionfruit, guava and fresh citrus. The acidity is high, but the mouthfeel is still carries a soft creaminess, finishing with bitter greens.

Brilliant wine. Treat this like a Chardonnay and don't serve it too chilled.

"I make wine in a way that would probably be considered quite traditional. Old barrels, wild ferments, simple winemaking. I generally try to avoid making anything that’s fashionable because these things come and go. I just want to make well-farmed wines that speak of the incredible place we live. Entropy was something I was always obsessed with as an artist and in my life - the constant movement of the universe to disorder, the never-ending arrow of time. In many ways, the job of the winemaker is to try to slow the speed of entropy, bottling what would otherwise have quickly become vinegar."

90 Points - "Sauvignon blanc from two bits of Gippsland, went to barrel, made this wine. Entropy a star producer on the rise and rise and rise, for me. This is good, pent up, lemon and green apple focused in style, licks of almond, faint green herbs. Flavours and scents also show a light ashy-earthy note too. It’s great in texture as it flows creamy-like and then tightens up with some bite and pucker, though the finish is a bit smoky-acrid, though you could say ‘pleasingly bitter’ too. Ryan Ponsford started his wine adventure with a pivotal bottle of additive-free Pinot Noir made by cult wine figure Bill Downie.

Not long after, Ryan found himself in Bill's vineyard, pruning, plucking, tending the vines and taking notes from Bill and his farming partner Pat Sullivan.

It wasn't long before Ryan jumped in boots and all and started his own label made with the same philosophy as the wines of Pat and Bill. Now he's bought a patch of dirt in Gippsland and is putting vines in the ground.

His journey is just at the beginning, but the DNA of what Ryan is planning is well and truly on the right track. Watch this space, there is plenty more in store for the 2022 Young Gun of Wine!

No, feel free to mix it up! There is no minimum requirement. You can order wines in any quantity or combination, 1 or 50+ bottles.

We stock three different sized gift boxes (single, three bottle and six), all are available for purchase for a flat rate of $8. They look great and make an awesome impression.

To add a gift box to your order, simply add at checkout. The special requests box is your friend, please give us as many details of what you are looking for and we will try our best, or get in contact to discuss it with you.

If you can't add more wine to your cart it means we are low on stock of that wine. For example, if you are only able to 3 bottles and no more that means we only have 3 bottles left of that wine. If it's a must have, please contact us and we may be able to order more in for you.
