The 2018 Blanc de Blancs Zero Dosage is classic Mordrelle – small-batch, hands-on sparkling with serious time and care behind it. Made from 100% Chardonnay grown near Hahndorf in the Adelaide Hills, this wine spent nearly six years on lees and was disgorged by hand à la volée – the old-school way, with no freezing, no shortcuts.
Martin Moran doesn’t add dosage here, which really lets the purity of the fruit and all that extended lees aging shine through. It’s dry, tightly wound and full of detail – toasty, nutty, and savoury, but still bright and refreshing. There’s no flash, just a quietly complex, proper méthode traditionnelle sparkler made by someone who’s clearly put the work in.
This one’s about texture, length and restraint – not trying to be Champagne, just showing what great fruit and patience can do in the Hills.
