About The Wine

 This 2017 Chardonnay is arguably the best example to date of what these two brilliant winemakers are trying to achieve in their colab project.

The fruit comes from the Full Moon vineyard in the cooler Gladysdale sub region of the Upper Yarra Valley, with all the hard work being put in in the vineyard rather than the winery. It's very simply whole bunch pressed into old, large format oak, with wild yeasts no additions.

It's a natural, energetic, highly characterful Chardonnay, expressing the slightly wild side if these two wonderful winemakers. 
 
The 2017 vintage received an outrageous 96 points from The Wine Front's Mike Bennie - a great release of this delicious wine.

 

About Salo

Salo is the project of two of the Yarra Valley's most loved winemakers - Steve Flamsteed (of Giant Steps fame) and Dave Mackintosh (Arfion main man).

They describe the aim of this side label best:

"We want to use intuitive winemaking on premium parcels of fruit to make gritty, textured, natural wines. University taught us how to overcomplicate things; to add yeast, add malo bugs and add complexity by working wines. It’s taken many years to knock these thoughts out of our heads, and we’ve found that if you have great fruit, the best wine is made by doing bugger all."

These wines are released in extremely limited quantities and are a cult-favourite among Yarra Valley Chardonnay fans.

"A little extra flex in this wine, some distinct personality, despite the hands-off winemaking. Let to do its thing on lees, bottled from the big, older barrels the wine settles into over its pre-bottling life. The red clay soil site at higher-than-usual-Yarra altitude is likely also playing a part in the distinct gras and funk, mineral charm and piercing acidity going on in this wine. Killer. Bold, savoury style of chardonnay, loads going on, wilder-edged, chalky pucker, spiked with dried apple, saltiness, flint and smoke. Has big volume of perfume too, more of the ripe and dried apple plus that delicious, savoury nuttiness. Superb wine here. Rolls with so much personality, charismatic, texture, energy. Otherworldly. THE VINEYARD

Our fruit was grown by Simon Harte at the high altitude, Full Moon Vineyard in Gladysdale, Yarra Valley.  

Simon farms the red basalt clay soils with the utmost care, tending his Chardonnay vines like a garden, and getting amazing results for us over the last 5 years. 

 

THE SEASON

We’re pretty excited about 2017, not only because it is our tenth vintage, but because it has to be one of the best we’ve seen…the growing season was moderate and these moderate years produce the great Yarra wines.

It all began with a warm 2016 season, which gave us lots of healthy, fruitful buds, followed by a nice dry spring with good flowering and fruit set. Mild temperatures coupled with intermittent rain events leading up to harvest kept our canopies dark green and healthy. Everything progressed at a fairly relaxed pace meaning we could wait patiently until ripeness and flavour was just right before picking. It was just a beautiful year to grow grapes and make wine.

The yields were very good and the fruit was in pristine condition at harvest. The flavours were a lovely version of citrus and white stonefruit, with an amazingly balanced crisp acidity. 

 

THE WINE

Mix of 96 and 76 Clones on own roots at about a 50/50 blend.

Fruit was sorted in the vineyard, then whole bunch pressed straight to 500 Litre French puncheons with wild yeast fermentation. 

The Large oak vessels we use are all second, third use, so they have been seasoned to take off the hard edges.

Ferments were nice and warm peaking at about 25 deg C. No stirring, no malolactic fermentation.

After 10 months of natural settling, the wine was decanted off yeast lees to tank for a short chill in December.

No fining or filtration at all, so you may see a very fine sediment after a few years.

We ship primarily with Australia Post. Their fast, easy and reliable delivery is completely FREE for any orders of $150 or more, or just $9 for any orders of $149 or less. There is no minimum order quantity and you can mix and match as much as you like.

The vast majority of orders are dispatched from our Sydney warehouse on the same or next business day. Estimated delivery time frames can be viewed here. Please include Authority to Leave instructions in the ‘SPECIAL REQUESTS’ box during checkout if you may not be available to sign for your delivery and would like it left at your front door.
